To make this type of curry, sauté prawns with a mixture of spices like cumin, coriander, turmeric and chilli powder. Then, simmer them in a sauce made from tamarind paste, coconut milk and tomatoes. Prawn and Avocado Ceviche (Peru)

Prawn and avocado ceviche is a variation of the classic ceviche, which is a traditional dish that typically consists of raw fish marinated in citrus juices. In this unconventional twist, we use prawns instead of fish.

To prepare prawn and avocado ceviche, the prawns are marinated in a mixture of lime or lemon juice, red onion, cilantro, jalapeno or other chilli peppers, and salt. The acidic citrus juice ‘cooks’ the prawns, causing them to turn opaque and firm. The marination process infuses the prawns with tangy flavours and enhances their natural sweetness. 

Avocado, which is rich and creamy, is then added to the ceviche to balance the tanginess and add a smooth and luxurious texture.
